Lightened Up Marshmallow Sweet Potato Casserole

A lighter version of the classic sweet potato casserole, roasted to concentrate natural sweetness and topped with gooey toasted marshmallows. It’s comfort food reimagined—lighter, brighter, but with the same soul-soothing satisfaction.

  • 3 pounds sweet potatoes (about 45 medium)
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 large egg, lightly beaten
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1 1/2 cups mini marshmallows
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle. Scrub the sweet potatoes clean. You can peel them now or after roasting.
  2. Prick each sweet potato a few times with a fork. Place them directly on the oven rack or on a baking sheet. Roast for 45-60 minutes, until very soft and a knife slides in with no resistance.
  3. Let the sweet potatoes cool slightly until they are cool enough to handle but still warm. Peel off the skins.
  4. Transfer the peeled potatoes to a large mixing bowl. Mash them with a potato masher or fork until mostly smooth, leaving a few small lumps for texture.
  5. Add the melted coconut oil, maple syrup, vanilla extract, beaten egg, salt, cinnamon, and nutmeg to the mashed potatoes. Stir until well combined.
  6. Lightly grease a 9×13-inch baking dish with coconut oil or cooking spray. Spread the sweet potato mixture evenly in the dish and smooth the top with a spatula.
  7. Bake the dish (uncovered) at 400°F for 20 minutes, until the potatoes are set and the edges start to look slightly golden.
  8. Remove the dish from the oven. Sprinkle the mini marshmallows evenly over the top. If using pecans, scatter them over the marshmallows.
  9. Return to the oven and bake for another 8-10 minutes, watching closely, until the marshmallows are puffed and golden brown.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Roast the sweet potatoes instead of boiling to concentrate their natural sweetness and avoid a watery casserole. Watch the marshmallows closely as they can go from perfectly toasted to burnt in about 30 seconds. For make-ahead, prepare the sweet potato mixture up to two days in advance and store covered in the fridge; add 5 minutes to the first bake when baking from cold.
