  • 1 small head green cabbage (about 1.5 lbs / 680g), cored and thinly sliced
  • 1 large yellow onion, thinly sliced
  • 3 tablespoons (45ml) apple cider vinegar
  • 1/2 cup (120ml) low-sodium chicken or vegetable broth
  • 1 teaspoon caraway seeds
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or butter (divided)
  • Optional: fresh parsley, chopped, for garnish

Instructions

  1. Prep your ingredients: Slice sausage on a bias into 1/2-inch rounds. Quarter cabbage, remove core, and slice into thin ribbons (about 1/4-inch wide). Thinly slice onion.
  2. Sear the sausage: Heat 1 tablespoon oil or butter in a large skillet over medium-high heat. Add sausage in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Flip and cook 2 more minutes. Transfer to a plate; do not wipe pan.
  3. Sauté onion and cabbage: Reduce heat to medium. Add remaining 1 tablespoon oil or butter. Cook onion for 2 minutes until softened. Add cabbage, 1/2 teaspoon salt, and pepper. Cook, stirring occasionally, for 3-4 minutes until cabbage starts to soften and brown slightly.
  4. Add braising liquid: Sprinkle caraway seeds over cabbage. Pour in apple cider vinegar and broth. Scrape up browned bits from pan bottom. Bring to a simmer.
  5. Combine and simmer: Return sausage to pan, nestling into cabbage. Reduce heat to medium-low, cover, and simmer for 5 minutes until cabbage is tender and flavors meld.
  6. Finish and serve: Remove lid. Taste and adjust seasoning. Garnish with parsley if desired. Serve hot.

For best results, don’t crowd the pan; sear sausage in batches if needed. Let cabbage get some color for added sweetness. Adjust heat to maintain a gentle simmer when adding vinegar. Taste and adjust seasoning at the end. Leftovers keep in the refrigerator for up to 4 days and reheat well in a skillet with a splash of broth.
